I was so hungry for a cracker/bread/cookie. I haven't had any in a couple weeks. I tried making wheat crackers and they bothered me. I threw that out, and decided to try some cookies.
Raisin Cookies
Preheat oven 375
Beat: 2 eggs, 1/2 cup Spectrum palm shortening until smooth, 1 cup sugar (I use beet Pioneer beet sugar)
Beat in: 1/2 cup tapioca flour, 1 cup millet flour, 1 cup buckwheat flour, 1 tsp salt, 1 1/2 tsp baking soda
Mix in: 1 cup Newman's Own raisins (This is a guess, I didn't measure raisins) Add more or less.
Drop tablespoon size balls onto a cooking sheet, (I have a cookie scoop thats like an ice scoop but smaller) bake 9 minutes.
Now I need to break down and make vanilla. You could add 1 tsp of safe vanilla.
My zucchini is ripening. I want my next cookie to have shredded zucchini.
