Finding out you have a food allergy can be devastating.

Finding out you have a food allergy can be devastating. I think my first thought was, "What does that mean?" You ask your doctor and he says just avoid that food. It's just a skin test. They aren't entirely accurate.

I am going to attempt to give you ideas and recipes on how to avoid corn. It can be quite the challenge.

Sorry that my blog is evolving into a little bit of everything in life.

Bread Maker Tips and tricks

I recommend to everyone to get a bread maker.  They are $40 now.  They can make short of having to cook everything.

Use your bread maker for any kind of bread

The new bread makers have a cook setting.  You can put any bread ingredients into the bread maker use the dough setting.  Once it's mixed select stop and then choose the bake setting.  The bake setting is 30 minutes.  Check your bread and, if your bread needs more time restart the bake setting until your bread is completely cooked.  You can choose to stop the bake cycle at any time.  I found it works good for quick breads.

1 Hour Yeast Bread

Add ingredients in order
1 cup water
2 Tbsp sugar
2 Tbsp oil
2 Tbsp water
1 tsp salt
3 cups flour
5 tsp yeast or 2 packages of yeast

Choose the 1.5 lb express bake 1 hour setting.

Pizza Dough

1 cup water
2 Tbsp oil
3 cups flour
3/4 tsp salt
1 tsp yeast
Select dough setting.  You do not have to what the whole cycle 1 1/2 hours, but it's softer if you do.  Once it's mixed let it rest for 10 - 20 minutes.  Take the dough out.  Roll on floured surface 1/4 - 1/2 inches thick, or what ever you want.  I use a jelly roll stoneware pan.

Toppings - use your imagination...  anything goes
Put tomato sauce on it.  sprinkle with italian seasonings. (rosemary, oregano, minced fresh garlic, basil).  I don't use sauce.  I just sprinkle the seasonings then add cheese, onion, bell pepper, and meat.
Bake 425 ~ 15 - 20 minutes.

French Bread - Easy in the summer time.  I put it outside or in the car covered to let it rise.

1 cup water
3 1/4 cup flour
3/4 tsp salt
1 tsp yeast
Put in bread maker choose dough setting.
Roll on flour surface about 10 x 8.  Roll up dough, pinch the edge closed and the ends.  Put on floured jelly roll size pan(I use stoneware).  Let rise until double.  Make 3 - 4 diagonal cuts with sharp knife.  Brush with egg white mixed with 1 Tbsp water.  Bake 375 for 20 minutes brush with egg white mixture again and bake an additional 15 minutes.
